St. Patrick's Day Mojitos

I am definitely not a whiskey or Guinness girl...so for St. Patrick's Day I'm making mojitos! Not the traditional Irish drink, but the green color makes it perfect for our celebration. St. Patrick's Day is really big in my house and every year we always have corned beef and cabbage with festive decor, great friends and flowing drinks. Even growing up my sister and I used to make leprechaun traps the night before St. Patrick's Day and would wake up to find the furniture rearranged, green milk and green bagels. Sharing my recipe based off of Epicurious' mojitos, cheers!!

Ingredients

2 tablespoons (1 ounce) fresh lime juice

2 ounces simple syrup

1/4 cup (2 ounces) white rum

2 tablespoons (1 ounce) club soda

Crushed ice

Directions

Stir together lime juice and simple syrup. Add in mint leaves to the bottom of your glass, muddle the mint until crushed. Then pour club soda and rum, adding a green straw and extra mint leaves for a decorative garnish.
