Lucky leprechaun ice cream sandwiches


Luck of the Irish! There's something about Lucky Charms that signal St. Patrick's Day, maybe it's because of the marshmallow rainbows or magical designs, but I knew I wanted to incorporate them into a whimsical dessert. Enter...Luck Charm ice cream sandwiches! The perfect balance of gooey cookies with flavorful mint chocolate chip ice cream.

 

Timing: 2 hours

INGREDIENTS

1 cup butter (softened)

3/4 cup sugar

3/4 cup brown sugar, packed

2 Eggs, large

2 teaspoons Vanilla

2 1/4 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

Lucky Charm marshmallows

Mint chocolate chip ice cream


DIRECTIONS

  1. Preheat your oven to 375 degrees.

  2. Open your Lucky Charms and pick out the marshmallows into a separate bowl; set aside.

  3. Stir together flour with baking soda and salt; set aside.

  4. Next, in an electric mixer, beat butter with sugar and brown sugar at medium speed until the texture is light and creamy in color.

  5. Add in eggs and vanilla, one at a time, mixing until incorporated. Scrapping down sides of the bowl in between to ensure ingredients are folded in.

  6. Mix in dry ingredients gradually, scrapping down sides of the bow.

  7. Remove the bowl from your electric mixer, then using a rubber spatula gently stir in the lucky charms until combined.

  8. Using a large cookie scoop, place onto a line baking sheet and bake for 8 minutes.

  9. After 8 minutes, take the cookies out and place a few more lucky charms on top of each cookie. Bake for an additional 2 - 3 minutes.

  10. Using a spatula, place cookies on a cooling rack until completely cool (about an hour).

  11. Once your cookies are cooled, use a large cookie scoop for mint chocolate chip ice cream and scoop onto one cookie. Take a second cookie and sandwich on top.

  12. You can either prepare your ice cream sandwiches ahead of time and place in the freezer or enjoy right away!
