I can't believe it's almost July!! It's crazy how fast time has been flying by, and although it will feel differently this year our plan is to hang out at home while enjoying delicious food, festive cocktails and even better company. As a fun dessert that channels red, white and blue, I made these ice cream sandwiches using homemade patriotic M&M cookies, vanilla ice cream and these adorable sprinkles from Michaels! I couldn't find a Fourth of July mix, so I purchased separate packages of red, white and blue sprinkles with different textures to create my own sprinkle mix.
When assembling the ice cream sandwiches, I included a large scoop or two of ice cream and rolled them in the sprinkles. Serve on a cake stand to make it extra special. The fun part about this dessert is you can really use any of your favorite ice cream flavors, or even set up a bar for family or guests to make their own!
